More specifically, could an airline discriminate against potential flight attendants who have asses wider than X inches?
Let me clarify, the basis for the discrimination is not because the airline believes that large assed people are inferior. The basis is that larged assed people cannot do the job as efficiently and also irritate the customers because aforementioned large ass bumps into customers during the course of job duties.
This is a completely serious inquiry.

Fat is not a protected category. Disability is, although the employer is allowed to ask the applicant to demonstrate that they can perform the essential job functions with or without a reasonable accommodation.
Yes, in certain circumstances. I think the term is a "bona fide occupational qualification" which allows an employer to discriminate. For example, a synagouge can certain exclude Christians when hiring a rabbi. Appearance can be such a factor in some cases.

Can a synagogue exclude a rabbi for having a fat ass?

Probably, being fat is not a protected class, unless it could be shown to be some type of disability.
