turn it every minute after the first sear, and spoon ladle the butter to baste the meat

not fancy -- simply the proper way to do it

Who are the guys here who enjoy their steaks well done? Come out of the shadows and reveal yourselves.

I assume the ketchup and various sauces crowd is heavily well done.

Steaks don't need to be fancy. Get a thick cut. Get the charcoal grill hot. Put steak opposite of coals until IT is 125-135 depending on how you like your steak. Put over coals for a bit on each side to sear. You'll get a nice edge to edge pink finish. Salt and pepper works. Montreal steak works. I even like it with a little lawrys and cavenders Greek. No sauce should be needed unless you fuck up.

Sear in a cast iron skillet for a minute or so on each side and then finish in the oven imo

Medium rare plain very good.

Medium rare Heinz 57 better.

I don' have to overcook it to like it better with the sauce.

Same with pork chops (but I cook those to 140 and steak around 130).

Since we are talking food here I have a cow tongue and heart in the freezer from a quarter beef I bought awhile back. Dont' want to throw the stuff away but don' know how to cook it. Crock pot? Slice up and fry?

Since we are talking food here I have a cow tongue and heart in the freezer from a quarter beef I bought awhile back. Dont' want to throw the stuff away but don' know how to cook it. Crock pot? Slice up and fry?
Haven't cooked heart before but I've used tongue to make tacos and it's fairly easy. Cook it in a slow cooker on low for 8 hours covered in water and with a bunch of aromatics, then dice it up into smaller pieces and sear those off in a pan.

The taco place by Paul's Discount (has gone by a few names) sells tongue tacos. They're decent. Not tough. The cheek tacos are much better though.

Only if you fuck it up. If you cook it right it's really tender

Cabeza is probably my favorite kind of taco but I haven't ever cooked it myself. Place near where I used to work did them really well
